Fermented pumpkin water kefir beverage (PWK) is dairy-free and without added sugar, preservatives and artificial flavours. PWK contains 109 CFU/mL viable Lactobacillus mali strain K8 isolated from water kefir grains. It is stable for at least 4 weeks at refrigerated (4°C) storage. It is packed with carotenoids, minerals, dietary fibres, phenolics, and antioxidants. Furthermore, PWK could inhibit α-amylase and α-glucosidase enzymes which prevents the hydrolyzation of disaccharide into glucose, thus slows down glucose absorption. This could promote the efficacy of the body achieving optimal blood glucose after a meal and help manage postprandial hyperglycemia in prediabetic and Type-2 diabetic patients.
